Everything that can be controlled, should be controlled as meticulously as possible, and everything that cannot be controlled should be left to nature. Food should taste of food. Let the farmers do the work. Find the best of everything and put it on the center of the plate. Good sea salt and good olive oil.

The most important ecological decision we make each day is what we’ll eat. Sourcing things from nearby, trying not to rely on food systems.

I like to incorporate food and techniques from every part of my experience. I think there should be some spice to things. I think there should be some wows. I think cooking is a romantic gesture.

Ultimately, the heart of this is balance. Everything in balance, in the kitchen, on the plate.

I hope people feel a sense of place when they come to Cork Restaurant. I hope the food is playing nicely with the wine. I hope everything is so good you can’t stop eating, and when you go home, you have to try to recreate it.
