Located on School Street in downtown Stowe, Cork is a chef-driven restaurant and natural wine shop offering a seasonal menu built around local Vermont ingredients.

Our menu changes almost daily under Executive Chef Weston Nicoll, shaped by what's coming out of the farms and the rhythm of the seasons. The wine list rotates alongside it with organic and biodynamic bottles chosen to spark a little discovery, plus artisanal cocktails crafted by Ian Budd.

When Danielle opened Cork, combining a restaurant and a natural wine shop under one roof wasn't just uncommon in Vermont — it wasn't legal. She worked to change that, championing legislation that made Cork the first establishment in the state licensed to operate as both. That fight wasn't incidental to what Cork is. It's the reason Cork exists.

Natural wine is made with minimal ingredients — grapes grown without synthetic pesticides or herbicides, fermented with native yeasts, and bottled with little to no additives. It is alive in a way that conventional wine isn’t. They shift with the seasons, age unpredictable, and pair beautifully with food that’s treated the same way. It’s why they belong alongside a menu built around Vermont farms.
